Is it possible to display different articles (or a menu list) within a product category?

For example...

I have five product categories and have five sets of articles which I would like to display within the correct category.

Is this available in any of the templates already released?

I have seen the website that you have referred in your post. This is not possible with standard VirtueMart. One of the possible way is to hack the standard codes to get something similar to what you want. This will require a lot of changes in the core set of codes.
